Ingredients Serving: 5

  1. Ingredients for Handvo :
  2. Rice - 1 cup
  3. Chana dal - 1/2 cup
  4. Tuvar Dal - 1/4 cup
  5. Urad dal - 2 tbsp
  6. Curd - 1 /4 cup
  7. Palak Puree - 1/2 cup
  8. Chopped Palak - 1/2 cup
  9. Corn kernels - 1/2 cup
  10. Grated Carrot - 1/4 cup
  11. Grated Lauki - 1/4 cup
  12. Turmeric powder - 1/4 tsp
  13. Green chilli paste - 2 tbsp
  14. Ginger garlic paste - 1 tbsp
  15. Eno - 1/2 tsp
  16. Sugar - 1/4 tsp
  17. Oil - 1/4 cup
  18. Salt - 2 tsp
  19. Ingredients for tempering :
  20. Mustard seeds - 2 tsp
  21. Cumin seeds - 2 tsp
  22. Sesame seeds - 3 tsp
  23. Hing - 1/4 tsp
  24. Curry leaves - 10 to 12
  25. Oil - 2 tbsp

Instructions

  1. Soak rice , chana dal , tuvar dal and urad dal for 5 to 6 hours.
  2. In a mixer take rice and all the dals and grind it. Add curd to it and keep it aside for another 5 to 6 hours for fermentation.
  3. Add green chilli paste , ginger garlic paste , salt , turmeric powder and sugar.
  4. Add grated carrot , grated Lauki , corn kernels , chopped Palak and Palak Puree to it.
  5. In a pan take oil and add mustard seeds. When it crackels add cumin seeds , curry leaves and sesame seeds. Add this to handvo batter.
  6. Add eno to the batter and mix it well.
  7. In a pan take oil add mustard seeds , cumin seeds ,sesame seeds and curry leaves.
  8. Pour handvo batter to it. Sprinkle sesame seeds on it. Cover the fry Pan and cook till it becomes crispy.
  9. Flip the handvo and cook till it becomes crispy from both the sides.
  10. Serve with tomato ketchup and green chutney.
