ABOUT Tomato dates RECIPE

Tomato is a rich source of vitamin- c and carotene. Date and coconut are good sources of fat, calcium, iron and protein. People suffering with acidity should not consume it much.

Ingredients Serving: 4

  1. 200 gm Tomatoes
  2. 2-3 pods garlic ( optional)
  3. 2 red chilli ( nos)
  4. 1/5 tsp mustard seeds
  5. 1/5 tsp fennel seeds
  6. freshly grated coconut -2 tablespoon
  7. 1/5 tsp coriander seeds
  8. sugar (2-3 tsp or according to taste)
  9. to taste salt
  10. 4-5 curry leaves ( nos)
  11. 7-8 dates ( nos)
  12. 1/5 tsp cumin-chilli powder
  13. as needed oil

Instructions

  1. Heat a wok. Pour 1-2 tsp oil and allow it to start smoking. Add the coriander, fennel and mustard seeds. Add the garlic, red chilli and curry leaves to the spluttering seeds. Cut each tomato into four halves and add to the wok.
  2. Cover the wok with a lid. Allow the tomatoes to soften. Then add 1.5 cups of water and salt. Bring to a boil and add the dates and freshly grated coconut. Keep on low flame and allow to simmer for 10-15 minutes.
  3. Add the sugar and cumin-chilli powder. Take off from the heat after 5 minutes. Serve with rice/rotis and even samosas.
