Ingredients Serving: 2

  1. For the pizza crust :
  2. Whole wheat flour 1 cup = 170 ml
  3. Coconut thick milk 1/4 cup or as required
  4. Salt a big pinch
  5. Powdered palm sugar 1/4 teaspoon
  6. Instant yeast 1 teaspoon
  7. Warm water 1 tablespoon
  8. Olive oil 1 tablespoon
  9. Red chilli flakes 1/2 teaspoon
  10. For the coconut sauce :
  11. Coconut thick milk 2 cups
  12. Corn flour 1.5 tablespoons
  13. Garlic cloves 4 finely crushed to paste
  14. Olive oil 1 tablespoon
  15. oregano 1/2 teaspoon
  16. Dried thyme 3/4 teaspoon
  17. Red chili flakes 1/2 teaspoon
  18. White pepper powder 1/4 teaspoon
  19. Salt 3/4 teaspoon or as required
  20. Other Ingredients :
  21. Onion medium 1 thinly sliced
  22. Carrot 1 small thinly sliced
  23. Parsley chopped 1 tablespoon
  24. Spring onion chopped 1 tablespoon
  25. Olive oil for greasing and brushing

Instructions

  1. Take 1 tablespoon warm water in a bowl .
  2. Add instant yeast to the water . Mix and set aside for 5 minutes .
  3. Take sifted flour, salt , sweetener in a wide bowl .
  4. Add chili flakes .
  5. Mix all together .
  6. Add coconut milk gradually . Knead to a soft dough .
  7. Cover the dough and keep it in a warm place for 1 hour .
  8. Meantime , let’s prepare the pizza coconut sauce .
  9. In a pan , add olive oil .
  10. Add crushed garlic .
  11. Add the corn flour and sauté the flour well in oil .
  12. Then add the coconut milk . Start stirring continuously to ensure there are no lumps .
  13. Stir until coconut milk reduces half .
  14. Sprinkle salt , red chili flakes , oregano and thyme .
  15. Mix all until saucy consistency . Coconut sauce is ready .
  16. Switch off . Allow the sauce to cool .
  17. Coming to the dough , our dough has doubled in size and is ready to use .
  18. Don’t forget to preheat cooker / oven .
  19. I preheated cooker for 10 minutes in low to medium heat .
  20. Divide the dough into two . This step is optional .
  21. Grease olive oil on a baking tray .
  22. Grease fingers with oil .
  23. Take the dough and place it on the tray .
  24. Flatten the dough to preferred thickness round crust .
  25. Press with your fingers to give it a pizza crust look .
  26. Use a fork and make few dots in the center portion of the pizza crust . Don’t press too much and tear the dough .
  27. Now apply the prepared pizza coconut sauce
  28. Arrange the veggies on top . Top another layer is sauce if preferred .
  29. Brush the sides with olive oil .
  30. Bake in a preheated cooker for 15 minutes .
  31. The crust turns golden while the sauce gives a tempting look .
  32. It’s done . Take it out hot and serve immediately .
