Ingredients Serving: 5

  1. 2 cups, flour
  2. ¾ cup, butter, at room temperature
  3. 1/3 cup, confectioners sugar
  4. 1¼ cup, pineapple, chopped
  5. ½ cup - brown sugar
  6. 1 - star anise
  7. ½ inch - cinnamon stick
  8. 2 - cloves
  9. ¼ cup - water
  10. ½ tsp - lemon zest
  11. Juice of ½ lemon

Instructions

  1. In a pan, put pineapple, brown sugar, star anise, cinnamon, cloves, water, lemon juice, lemon zest and water. Bring the mixture to a boil.
  2. Simmer until it reaches thick chunky jam consistency. Take it off the heat and cool it completely. Keep it aside.
  3. In a large bowl, mix the butter, sugar, and all-purpose flour with the fingers until the mixture resembles coarse crumbs. Some may be the size of a pea.
  4. Then transfer mixture on the work surface and knead very gently to bring them together to form a ball (Do not knead it too much with your palm).
  5. Wrap the crust dough in plastic wrap and refrigerate it for 1 hour.
  6. Take the crust dough and roll it on a parchment paper into a 14×14 inch square with a thickness of ¼ inch.Now cut the pastry of desired shapes around 2.5 to 3 inches each.
  7. Keep these pieces on a tray and refrigerate it for another hour.
  8. Preheat the oven at 180 degrees centigrade.
  9. Take out the pieces, put ¾-1 tsp of the filling in the center of one piece. Cover it with another piece. Press the edges gently with a fork so the two pieces get sealed. Arrange each pie on the baking tray
  10. Prick at the center from top using a fork. Brush with milk on top and sprinkle some sugar on it.
  11. Bake it for 12 to 15 minutes or till golden brown. Cool on wire rack and serve.
