ABOUT Veggie Thai curry RECIPE

Authentic lemon grass coconut based Tofu thai curry with very thai veggies on a rainy day with steamed rice ,indeed wowSeasoned with herb plants like lemon grass and basil .

Ingredients Serving: 2

  1. 5-6 pieces Tofu stir fried
  2. 1 tbspn corn flour
  3. 1 cup coconut milk
  4. Salt to taste
  5. 1tspn chili ginger garlic paste
  6. Some lemon grass
  7. Some basil leaves
  8. Few strands of purple cabbage
  9. 3-4 babycorn slit into two
  10. 1 medium carrot cut julliene
  11. 1/2cup sweet corn
  12. One or two spring onion greens
  13. 1 cup broccoli florets
  14. 2 tspn Butter to saute

Instructions

  1. Chop greens and onions small
  2. Cut long carrots and baby corn
  3. Cut out Tofu squares too
  4. Saute these in butter for 2minutes
  5. In same butter add the ginger garlic paste and veggies to saute
  6. Stir fry for 2 minutes,adding salt now
  7. Add the oregano,chilli flakes,keep coconut powder ready
  8. Make a slurry of coconut powder keepaside
  9. Now add the tofu in the veggies Stir fry
  10. To this slurry with cornflour
  11. Boil for 2minutes, add the. Coconut slurry ,boil 1 minute and put off flame
  12. Remove now in a bowl and serve hot with steam rice
  13. Serve hot
