Twice Baked Potato

Ingredients to make Twice Baked Potato

  • 2 large potatoes
  • 2 teapoons of butter
  • 3 tablespoons of hung curd
  • 3 tablespoons of grated paneer
  • 1 teaspoon of besan or gram flour
  • 1/2 tablespoon of fresh corainder
  • 1 green chilli
  • Salt and pepper as per taste

How to make Twice Baked Potato

  1. Pre-heat oven at 190 C.
  2. Scrub both the potatoes well. Prick them with fork multiple times.
  3. Bake them on a wire rack for 90 minutes or till tender. Cool the potatoes for 10 minutes.
  4. In the meanwhile, mix all the ingredients except butter in a bowl. Split the potatoes lengthwise into half.
  5. Scoop out the tender potato leaving just little thin shell. Keep aside the scooped potato.
  6. Fill the potato shells with the prepared filling with a heaping mound. Dab little butter on top.
  7. Bake for 15-18 minutes at 190 C. Serve with chopped coriander.

My Tip:

I added the scooped boiled potato back into the filling along with hung curd and other spices.
