Ingredients Serving: 4

  1. 250 gms - Small Brinjals (slit n deep fried)
  2. 4-5 large - potatoes (sliced and deep fried)
  3. 1 heaped tsp - khada masalas (mustard seeds, kalonji, jeera, methra, saunf n crushed kasuri methi)
  4. salt to taste
  5. generous pinch of heeng
  6. 1/2 tsp - turmeric powder
  7. 1/2 tsp - Red chilli powder
  8. 1 tbsp - Corriander powder
  9. Few sprigs of chopped Corriander
  10. 1 tsp - mustard /Refined oil

Instructions

  1. Heat oil in a pan.
  2. Add heeng and khada masalas. Saute for a minute.
  3. Add the powdered masalas..
  4. Immediately add the deep fried brinjals and potatoes, add salt and stir gently. Mix well.
  5. Now cover the pan with the lid and cook on slow flame for 5 minutes. Adjust salt and spices
  6. Turn off the gas, garnish with chopped Corriander leaves before serving. Serve hot with phulkas or paranthas.
