ABOUT Lebkuchen RECIPE

Lebkuchen are German cookies made using spices, candied ginger or mixed peels and honey during Christmas. Recipe idea is from Woman and Home.

Ingredients Serving: 30

  1. 2 cups plain flour (all purpose flour)
  2. 2/3 cup ground Almonds
  3. 2 tsp Ginger powder
  4. 1 tsp Cinnamon powder
  5. 1/4 tsp Nutmeg powder
  6. A generous pinch of clove powder
  7. 2 tsp Cocoa powder
  8. 1 tsp Baking powder
  9. 1/2 tsp soda bicarbonate (baking soda)
  10. 1/2 cup candied mixed peel or crystallized ginger
  11. 2/3 cup honey
  12. 1/3 cup (75 gms) soft butter
  13. For topping: 200 gms dark or milk chocolate

Instructions

  1. Preheat the oven to 180 degree C. Grease baking trays with butter or line with parchment paper.
  2. Sift (sieve) flour, almond powder, cinnamon, nutmeg, ginger powders, baking soda, baking powder and cocoa powder into a big bowl.
  3. Add the mixed peels or crystallized ginger and mix into the flour.
  4. Put honey and butter into a small pan. Heat it over low heat and stir constantly till the butter melts.
  5. Pour the honey mixture into the flour mixture. Mix the flour with a spoon or spatula.
  6. Knead the flour into a dough. Initially it maybe a bit sticky. Leave it for 2-3 minutes.
  7. Take about a tablespoonful of the dough and roll it into a ball. Place it on the tray. Flatten it a bit (it should be about an inch thick).
  8. Repeat above step with the remaining dough. Remember to leave a space about an inch between the cookies.
  9. Bake the cookies for 10 to 12 minutes or till the edges are brown. Remove the cookies from the tray and place on a wire rack to cool.
  10. Place the chocolate pieces in a heat proof bowl or a small steel bowl or pan. Heat water in a pan. Place the bowl with chocolate pieces over the boiling water (bottom should not touch the water). Mix till the chocolate melts.
  11. Dip the cookie into the chocolate or top it with chocolate.
