ABOUT Swedish Butter Cookies/Spritz Cookies [eggless and whole wheat version] RECIPE

Delicate rich butter cookies that are shaped with either a cookie press or by piping them. Spritz cookies are a favourite during christmas. I have made an eggless and whole wheat version of the same to increase the health quotient.

Ingredients Serving: 10

  1. Soft Unsalted butter -3/4 cup [150 gm]
  2. Powdered sugar -3/4 cup [140gm]
  3. Whole wheat flour- 1 and 1/2 cups [200gm]
  4. Baking Soda - 1/2 tsp
  5. Cornflour-1 tbsp
  6. Vanilla extract- 1 tsp
  7. Curd-1 tbsp
  8. Cocoa powder [optional]- 2 tbsps

Instructions

  1. Pre heat oven at 180 degrees for 10 minutes.
  2. Sift the whole wheat flour and baking soda together until uniformly mixed. [sieving a couple of times is a good idea]
  3. Mix the cornflour and curd. Beat well and set aside .[ This works as a wonderful egg replacer in this recipe]
  4. In a large bowl cream the butter and sugar together until it turns light and fluffy.
  5. Add the cornflour mix and vanilla extract. Mix well.
  6. Mix in the sifted flour and bring all the ingredients together. You will now have a lovely buttery smooth dough [that can be piped]
  7. Fill into a piping bag fitted with a large start nozzle/ use a cookie press. You may also fill a zip lock pouch and cut out a small opening in one corner and use the same to pipe.
  8. Grease a baking tray and line it with parchment paper.
  9. Pipe your cookies onto the parchment paper [ these cookies don't spread out or expand much. You need not leave too much space between the cookies]
  10. Bake in the pre heated oven at 160 degrees for 15 minutes or until the edges start to brown.
  11. Transfer onto a wire rack and enjoy once completely cooled.
