About Healthy Granola cookies Recipe

Healthy Granola cookies – Is quite an interesting, quick and flexible recipe and you can definitely enjoy these treats without guilt hanging around you. These healthy circles are packed with dried fruits, oats, dalia (broken wheat) and flax seeds. And the small portions size with minimum fat and sugar makes these granola cookies the ultimate health food.

Ingredients to make Healthy Granola cookies

  • 1/2 Cup of regular oats
  • 1/4 Cup of dalia (broken wheat )
  • 1/2 cup of wheat flakes
  • 2 tablespoon of flax seeds roasted
  • 1/4 Cup of chopped almonds
  • 1/4 Cup of chopped pistachio
  • 1/4 Cup of dried cranberries
  • 4 tablespoons of granulated white sugar
  • 4 tablespoons of honey
  • 2 tablespoons of butter
  • A dash of salt

How to make Healthy Granola cookies

  1. Line the bottom of a cup cake tray with the small circles of parchment paper cut to the size and keep aside.
  2. Measure all the ingredients and keep in separate bowls.
  3. First of all put the dalia in a pan and dry roast it on a medium heat until slightly brown and fragrant. Pour the roasted dalia in a big mixing bowl.
  4. Now in the same pan add the oats and roast for a minute. When done put the oats in the same mixing bowl along with dalia.
  5. Use the same pan to roast the flax seeds, which will only take couple of seconds. Add the flax seeds with dalia and oats.
  6. Add in the chopped almonds, chopped pistachio, cranberries and salt. Mix all the ingredients and keep aside.
  7. In a pan heat the butter on medium heat and add the sugar and honey. As sugar dissolves; pour the hot caramel over the ingredients in the bowl.
  8. Mix using a wooden spatula and be careful, it will be hot. Mix all the ingredients together and divide into the prepared cup cake tray.
  9. Press with your fingers to get smooth tops. Now using a flat surface or bottom of a glass, press into each cup cake. Bake for 10 minutes at 180* C.
  10. The cookies will have a slight golden edges and will be soft when hot. Let them cool on a wire rack for some time and the carefully take them out.
  11. You can melt some chocolate and drizzle over the top. Or just enjoy as it is.

My Tip:

Reason I am calling this a flexible recipe is that you can change most of the ingredients as per your choice or availability. Any type of dry fruits to any kind of seeds (I have used roasted flax seeds; you can go with pumpkin seeds, sunflower seeds, or melon seeds). Go ahead and make these in your kitchen and share with me if you come up with something unique and yummy. Imagine the possibilities.
