ABOUT Khaman Dhokla RECIPE

It is a Gujarati version of a tempting snack.

Ingredients Serving: 5

  1. 1 1/2 cup besan
  2. 1 teaspoon sugar
  3. 1 teaspoon chilli paste
  4. 1 teaspoon citric acid
  5. 1 cup warm water or as per need
  6. 2 teaspoon turmeric powder
  7. 1 teaspoon oil
  8. 1 teaspoon fruit salt
  9. Salt to taste
  10. For tempering:
  11. 2 teaspoon oil
  12. 1 teaspoon mustard seeds
  13. 1 teaspoon Sesame Seeds
  14. 3-4 Dry red chillies
  15. 1/2 cup water
  16. 1 teaspoon grated coconut
  17. 1 teaspoon sugar
  18. 1 teaspoon Coriander leaves

Instructions

  1. Take a bowl, add besan, citric acid, sugar and mix well. Add lukewarm water and mix well. Rest it for 10 to 15 minutes.
  2. Add turmeric powder, salt, chilli paste, oil and mix well.
  3. Add fruit salt in it. Sprinkle water and mix well.
  4. Stir it well, without any lumps and make a smooth batter.
  5. Now grease the steam pan with 1/2 teaspoon oil. Pour the smooth batter in the greased pan.
  6. Place pan in a steamer pan or the dhokla cooker. Water should be boiling or enough hot. Steam it for 20 - 25 minutes.
  7. Check by inserting a knife, if the knife or toothpick comes out clean it is done.
  8. For tempering: Take kadai/wok on a gas, add oil and when it is hot, add mustard seeds, sesame seeds, red chillies, water, sugar, coriander leaves and grated coconut. Turn off the gas. Pour the tempering on the khaman dhokla.
  9. Cut it Into pieces and serve it.
