Merry Berry cheese mount blanc shortcake is a rich,creamy cake with sweet and sour flavors.This dessert just adds charm to any dinner table.Mixed berries can be substituted with Only Raspberries, strawberries or any other berries of choice. It is an easy , put together dessert that leaves your guests jaw stuck. So be ready to get drenched in their applause.

Ingredients Serving: 5

  1. For the shortcake : 1/2 cup : Self raising flour
  2. 1/2 cup : Powdered sugar divided
  3. 3 large : Eggs separated
  4. 2 tbsp : Melted butter
  5. For the Mascarpone cheese cream :
  6. 250 gm : Mascarpone cheese
  7. 250 ml : Heavy cream
  8. 1/2 cup : Powdered sugar
  9. Dash of Vanilla extract
  10. 10 to 12 : Mixed berries (i used frozen)
  11. 2 tbsp : Sugar
  12. For Garnish : Berries of choice
  13. Few Mint leaves

Instructions

  1. CRACK THREE LARGE EGGS STORED AT ROOM TEMPERATURE AND TAKE YOLKS AND WHITES INTO SEPERATE BOWLS.
  2. TO THE EGG WHITES ADD 1/4CUP OF POWDERED SUGAR.
  3. BEAT WITH ELECTRIC BEATERS OR HAND BLENDER.
  4. WHISK..WHISK..WHISK !
  5. CONTINUE WHISKING UNTIL STIFF PEAKS ARE FORMED.
  6. ONCE THE PEAKS ARE FORMED SET THEM ASIDE UNTIL UNDEED.
  7. BEAK THE YOLKS AND WHISK FOR FEW SECONDS.
  8. ADD ANOTHER 1/4 CUP OF POWDERED SUGAR.
  9. INCORPORATE THE POWDERED SUGAR AND WHISK UNTIL IT TURNS PALE YELLOW IN COLOUR.
  10. ADD THE WHISKED YOLKS TO THE WHITES.
  11. FOLD THE YOLKS WITH WHITES UNTIL WELL INCORPORATED.
  12. BE GENTLE AND LIGHT HANDED WHILE FOLDING SO THAT YOU DONT DEFLATE THE WHITES.
  13. NOW ADD 1/2CUP OF SIFTED SELF RAISING FLOUR.
  14. AND APPLYING THE SAME TECHNIQUE OF CUT AND FOLD INCORPORATE THE FLOUR WITH BEATEN WHITES AND YOLKS MIXTURE.
  15. ADD 2TBSP OF MELTED BUTTER AND BLEND THEM WELL.
  16. LINE 15/9" BAKING PAN WITH PARCHMENT PAPER AND POUR IN THE PREPARED BATTER.
  17. WITH A FLAT SPATULA SPREAD THE BATTER EVENLY ON TO THE BAKING PAN.
  18. ONCE DONE TAP THE TRAY A COUPLE OF TIMES ON A HARD SURFACE TO RELEASE ANY AIR BUBBLES FORMED WHILE FOLDING.
  19. PREHEAT THE OVEN TO 140 DEGREE CELCIUS AND BAKE EXACTLY FOR 12 MINUTES.
  20. WHILE ITS BAKING LETS PREPARE THE BERRY COULI. FOR IT ADD AROUND 10 MIXED BERRIES OF CHOICE ALONG WITH 2 TBSP OF SUGAR
  21. MICROWAVE ON HIGH FOR COUPLE OF MINUTES UNTIL SUGAR IS MELTED AND GIVE IT A GOOD STIR.
  22. ONCE BAKED REMOVE THE TRAY AND COOL FOR COUPLE OF MINUTES.
  23. NOW INVERT THE SHEET CAKE ON TO A FRESH PIECE OF PARCHMENT AND PEEL OF THE LINER.
  24. TRIM THE UNEVEN EDGES ON ALL SIDES.
  25. MEASURE THE LENGTH AND MARK OUT THREE EQUAL PORTIONS
  26. USING A RULER CUT THE SHEET CAKE INTO THREE BY RUNNING A KNIFE THROUGH THE MARKINGS.
  27. SEPERATE THEM FROM THE LINER.
  28. PERFECTLY SIZED RECTANGLE SHEETS.
  29. PLACE A RECTANGLE SHEET OVER PARCHMENT AND ADD GENEROUS AMOUNT OF MASCARPONE WHIPPING CREAM.
  30. FOR THE MASCARPONE WHIPPING CREAM WHIP 250GM MASCARPONE CHEESE WITH 250 ML OF HEAVY CREAM,1/2 CUP OF POWDERED SUGAR AND A DASH OF VANILLA UNTIL STIFF PEAKS.
  31. USING A FLAT BREAD KNIFE SPREAD THE CREAM EVENLY ON THE SHEET CAKE. SCRAPE OF IF ANY EXCESS CREAM.
  32. ONCE DONE PLACE ANOTHER SHEET OF CAKE ON TO IT.
  33. REMOVE THE EXCESS CREAM THAT SEEPS OUT.
  34. ADD THE COOLED BERRY JAM TO ONE PORTION OF CREAM AND MIX GENTLY UNTIL INCORPORATED.
  35. ADD THE BERRY CREAM TO THE SECOND LAYER OF SPONGE AND SPREAD EVENLY.
  36. SCARPE OF THE EXCESS AND EVEN THE TOP.
  37. ONCE DONE PLACE THE FINAL SHEET OF CAKE.PRESS WITH GENTLE HANDS.
  38. REMOVE THE EXCESS CREAM THAT SEEPS OUT AFTER PRESSING.
  39. ON TO THE TOP ADD A SLIGHTLY THINNER LAYER OF MASCARPONE CREAM AND SPREAD EVENLY.
  40. PLACE THE REMAINING CREAM IN A PIPING BAG FITTED WITH A MONT BLANC PIPING TIP.
  41. PIPE OUT THE CREAM GENEROUSLY COVERING ALL THE CORNERS IN AN ANGULAR MOTION.
  42. OUR MERRY BERRY CHEESE MONT BLANC SHORTCAKE IS READY TO SLICE AND GARNISH WITH BERRIES OF CHOICE AND MINT LEAVES.
