Ingredients Serving: 4

  1. For choux pastry-
  2. Milk - 3/4 cup
  3. Water - 1/4 Cup
  4. White butter - 110 gm
  5. Sugar - 1 tsp
  6. Salt - 1/2 tsp
  7. Oregano - 1/2 tsp
  8. Egg - 3
  9. For stuffing-
  10. Oil - 1 tbsp
  11. Asafoetida - 1 pinch
  12. Cumin seeds - 1/2 tsp
  13. Ginger Garlic Paste - 1 tsp
  14. Chopped onion - 1
  15. Chopped capsicum - 1
  16. Chopped tomato - 1 ( deseeded )
  17. Chopped paneer - 100 gm
  18. Boiled and chopped soya chunks - 8 -10
  19. Salt to taste
  20. Chilly pwd - 1/2 tsp
  21. Coriander pwd - 1 tsp
  22. Garam masala - 1/4 tsp
  23. Cumin pwd - 1/4 tsp
  24. Sambhar pwd -1 tsp
  25. Coriander leaves - 1 tbsp

Instructions

  1. For choux paste- Boil milk and water in a vessel. Add butter, salt, sugar and oregano, mix it well and when it boils again, swich off the flame.
  2. Add refined flour and whisk with the electric hand mixer until it comes to the room temperature. Now start adding eggs one by one and whisk continuously. It will be a thick batter.
  3. Now place it in a pastry bag with a large plain tip and pipe the oblongs on the baking sheet. Brush some eggwash on the top of it.
  4. Bake for 10 min in preheated oven at 200° then reduce the temperaure to 170° for 5-10 min or until the golden brown colour. Eclairs are ready.
  5. For stuffing- Heat oil in a pan, add ginger garlic paste, onion , capsicum, saute for a minute, add dry spices and sambhar masala, cook for 1-2 min.
  6. Add paneer , soya chunks , tomato, coriander leaves , mix it well and swich off the flame.
  7. Take out some dough from bneath of eclairs , to stuff the filling .(You can also slit from the centre to fill the stuffing)
  8. Place 2-3 tbsp of filling and cover with another eclair . Stuffed savoury eclairs are ready .
  9. Sauce- In a bowl add tamarind , mint and sweet raw mango chutney , mix well and serve with savoury eclairs
  10. Stuffing can be changed according to taste.
