Boiled Banana in tangy Tomato curry with roti, rice or paratha .

Ingredients Serving: 2

  1. Raw banana 3 ( boiled , not over cooked)
  2. Tomatoes 3
  3. Coconut gratedvandvroasted 1 tbsp.
  4. Garlic crushed / minced 1 tsp.
  5. Ginger grated 1 tsp
  6. Cannolla oil 1 tbsp
  7. Cumin 1 tsp
  8. Cloves 5
  9. Cashews 5 to 6 no ( optional)
  10. Curry leaves 4
  11. Bay Leaves 1
  12. Cinnamon powder 1/4 tsp
  13. Chilli Powder 1/2 tsp
  14. Turmeric 1/4 tsp
  15. Salt to taste
  16. Coriander leaves to garnodh.

Instructions

  1. Chop boiled bananas.
  2. Chop tomatoes .
  3. Heat oil in a pan. Add cumin .
  4. Once it splutters add chopped tomatoes .
  5. Add garlic and cloves.
  6. Add 1 tbsp water in grated ginger, squeeze out juice and add.
  7. Add curry patta, bay leaves.
  8. Fry a little, add chilli powder,turmeric.
  9. Fry till raw smell goes. Add chopped bananas and 1 1/2 cup water.
  10. As water boils, add salt. Simmer and cover on low heat.
  11. Add roasted grated coconut.
  12. Adjust the taste. Make gravy of consistency you need.
  13. Add cinnamon and turn off the heat.
  14. Add chopped Coriander leaves while serving.
  15. If you are adding Cashews , just fry and add.
  16. Eat with roti or rice.
