ABOUT Oven Baked Ranch Chicken Loaded Potato Fries RECIPE

Loaded Potato Fries are a popular American cuisine served in restaurants as starters or side dishes. The crispy cooked french fries are loaded with cheese , crispy chicken bites and drizzled with ranch dressing. A very easy yummy snack.

Ingredients Serving: 2

  1. For French Fries :
  2. 3 large russet or baking potatoes
  3. 2 tbsp olive oil or butter
  4. 1/2 tsp Dried Oregano
  5. 1/4 tsp cajun spice
  6. salt as per taste
  7. To prepare chicken for topping :
  8. 1 chicken thigh , skin and bone removed
  9. 1 tbsp mustard oil
  10. 2 tsp Ginger garlic paste
  11. 1/2 tsp Kasuri Methi powder
  12. 2 tbsp yogurt
  13. 2 tsp Lemon juice
  14. 2 tsp tandoori masala powder
  15. 1/2 tsp kashmiri chilly powder( to add color)
  16. 1/4 tsp cayenne (to add spice; you can adjust it accordingly)
  17. salt as per taste
  18. Other toppings :
  19. 1/2 cup shredded monterey jack cheese
  20. 2 tbsp ranch dressing

Instructions

  1. Preheat oven to 400F. Wash and clean the chicken thighs with cold water. Pat it dry and cut it into big pieces.Sprinkle 2 teaspoon of lemon juice, some salt, and half of ginger garlic paste.Mix and let the chicken marinade rest for 10 min .
  2. Prepare the second marinade. Combine mustard oil, cayenne and Kashmiri red chilly powder in a bowl. Add ginger garlic paste, yogurt, kasuri methi powder, salt and tandoori chicken masala powder.
  3. Add the second marinade with the chicken . Mix well so that the chicken is coated well on all sides. Bake the chicken in the preheated oven for 20 minutes. Take out the cooked chicken and shred it with 2 forks or by hand. Keep it aside.
  4. Prepare the french fries. Preheat the oven to 450F.
  5. Wash the potatoes with cold water and pat dry well. Peel off the skin. Take a potato and cut it into two halves lengthwise. Cut each half into two halves lengthwise and then again cut each half further into two halves lengthwise. Repeat this for other potatoes. Combine olive oil, oregano, cajun spice and salt in a separate bowl. Toss the potatoes with olive oil and spice mixture. Grease a baking sheet with cooking spray and spread the potatoes in a single layer. Bake until golden and crispy, about 20-25 minutes.
  6. Remove the fries and reduce the oven temperature to 400 F. Gather all the fries together such that there are no holes in between. Spread the shredded chicken evenly over the fries. Spread the shredded cheese over the chicken. Bake in the preheated oven for 5-7 minutes , until the cheese has melted.
  7. Take out the loaded fries and drizzle ranch dressing over the fries as much as you want. Serve it immediately.
