ABOUT Jollof Rice (Nigerian Tomato Pepper based Rice) RECIPE

It has been my long cherished desire to cook some spicy Nigerian Jollof rice. I have not eaten Jollof rice ever since I left Nigeria. Jollof rice is a fiery red coloured rice preparation using tomatoes, local red peppers called scotch bonnet and canned tomato paste along with some herbs and local spices

Ingredients Serving: 2

  1. 1 Cup uncooked Rice
  2. 1 large fresh tomato roughly chppped
  3. 1 small onion roughly chopped
  4. 1 red capsicum, seeds discarded
  5. 3 ton4 scotch bonnet peppers or any other fiery red oepper
  6. 2 tablespoons canned tomato paste
  7. 1 vegetable stock cube or curry powdee
  8. 1/4 teaspoon dried thyme or oregano powder
  9. A pinch of salt
  10. 2 to 3 tablespoons of oil or palm oil
  11. Water to cook the rice

Instructions

  1. Rinse and soak rice
  2. Bring thd rice to boil with 2 cups of water and cook till 3/4 done
  3. Remove the rice from the flame and set aside
  4. In a blender blend tomatoes, red capsicum chopped onions and red chillies till smooth puree is formed.
  5. In a large pan, heat oil and saute garlic
  6. Add the chopped onions
  7. Season with salt and stir fry for a minute. Then add the blended capsicum-onion-pepper puree, canned tomato paste, curry powder or stock cube, dried thyme or oregano. Saute well.
  8. Now add the rice
  9. Stir and cover with a foil and put a lid on it.
  10. Cook for 25 to 30 minutes
  11. Turn the heat off and allow the steam.
  12. Serve hot
