It has become more like a tradition at my mom's place to prepare Besan chekki at home during the festival Dusshera, they dont even think of any other sweet dish other than this and its our family favorite too .. She always makes this in bulk and We enjoy it to the very last bit ..Thanks to My mom for sharing this family recipe with me and now i follow the same tradition and make it for Dusshera as well !!

Besan chekki / Burfi

Ingredients to make Besan chekki / Burfi

  • 1.5 cups : Besan / gram flour
  • 120 gms : Khoya / mawa
  • 200 gms : sugar , powdered
  • 100 gms : Ghee / clarified butter
  • 2 tsp : cardamom powder

How to make Besan chekki / Burfi

  1. Dry roast the Mawa on a medium to low heat in a non stick pan until aromatic and slight change in color..
  2. Later remove this into a bowl and set aside until use..
  3. Now heat up non stick pan with ghee and add the besan to it..
  4. Stirring continuously roast the besan on low heat until golden in color and aromatic..
  5. Now cool this mixture at room temperature can cool the mixture in the pan itself but do not forget to stir in intervals as the pan is still hot..
  6. Now stir in the cardamom powder and roasted khoya.. Mix until completely combined.. At this time you can add roasted nuts of your choice too ..i did not add any as my mom does not ...
  7. Lastly stir in the powdered sugar and mix well until combined.
  8. Now remove this on to a greased plate and leave it for couple of hour to set..
  9. Later slice according to preference and serve or store in an airtight container stays good for upto 3 to 4 weeks ...

My Tip:

While roasting the besan make sure it has enough ghee if the ghee is less it becomes hard to stir while roasting .. A small trick to check the besan is roasted enough or not is sprinkle few drops of water if the water sizzles and disappears the moment you add ..that means its done..
