Ingredients Serving: 6

  1. 40 grams cake/self raising flour
  2. 2 Eggs
  3. 5 grams +30 grams granulated sugar
  4. 25 mili litre milk
  5. 35 grams red pumpkin peeled and diced
  6. 20 mili litre vegetable oil
  7. 1/4 th teaspoon baking powder
  8. handful chopped walnuts
  9. handful dried cranberries

Instructions

  1. place the diced pumpkin in a steamer to be steamed until softened
  2. meanwhile gather all dry ingredients except for walnuts and cranberries in a bowl
  3. crackers the eggs and separate the whites in another bowl
  4. beat the egg yolks and 5 grams of sugar well using a whisk or beater
  5. add the oil and milk
  6. whisk well until well combined
  7. set aside and mash the pumpkin well once soft
  8. add the pumpkin to the mixture and whisk
  9. using a sieve, sieve the dry ingredients into the bowl
  10. add the walnuts and cranberries
  11. fold in well using a spatula
  12. now add the remaining sugar to the egg whites and beat until soft peaks forms
  13. preheat the oven now at 200 degree celcius
  14. add this egg white mix in portions into the pumpkin mixture and keep folding in well
  15. once done, grease a cake tin or cup cake mould
  16. add the cake batter into the baking tin and tap few time to release air bubbles
  17. now place the tin in oven and bake for 20-25 minutes or until done
  18. cool the baked cake on a rack before serving
  19. serve as a tea or kid’s Halloween party cake
