This Diwali festive enjoy crispy and tasty flavour of cookies that is butter cookies.

Ingredients Serving: 10

  1. Maida /refined flour : 2 cup
  2. Warm butter : 1/2 cup
  3. Salt : 1 table spoon
  4. Ajwain /Carrom seeds : 1 tea spoon
  5. Warm water : 1/3 or 6-7 tablespoon of water
  6. Oil for frying

Instructions

  1. Take a boul, assemble all the ingredients. Sift flour in a big bowl /plate.
  2. Add Carrom seeds. Mix in salt.
  3. Use finger tips to rub oil eventually into flour.
  4. To check if the dough has sufficient butter, take some mixture in your hand, squeeze it tight. If it binds well and form a shape then the dough is ready to work on.
  5. But if the dough crumbled and fall off your fingers than it needs more warm butter.
  6. Spoon by spoon add enough water to form a salt and pliable dough.
  7. Cookies dough is ready. Cover and let it sit for 20 minutes.
  8. Heat oil in a kadhai. Make a small ball out of the dough and flatten it.
  9. You can even use a rolling pin to form a small disc shaped cookies.
  10. Add cookies to the hot oil. Maintain the oil temperature and make sure the oil is medium hot and not smoky.
  11. Cookies should float and cook in oil until crisp and golden brown in color.
  12. Remove from oil and set it on a paper napkin to drain off excess oil.
  13. Fried cookies are ready. Allow them to cool down completely.
  14. Store them in airtight container and good for 2-3 weeks.
