Here i am giving you an innovative fusion recipe of italian macroni pasta in konkani culinary condiment the kokum sauce . In my Recipe i have made a tangy juicy delectable sauce from kokum fruit peels and infused in the pasta along with shallow fried veggies. To combat its tanginess i have added a little powdered sugar too .Trust me you will make it repeatedly once you make it...

Ingredients Serving: 3

  1. Kokum peels 200 g
  2. Macroni pasta 150 g
  3. Fusilli pasta 150 g .
  4. Green onion 1 chopped
  5. Carrot 2 chopped into small cubes
  6. Beans french 4-5 cut lengthwise
  7. Cauliflower florets ( frozen 6-7
  8. Black salt 1 teaspoon
  9. Rasam powder 1 teaspoon
  10. Red chilly 1 teaspoon
  11. Whole red chilly(dry) 3-4
  12. Common salt 1 teaspoon
  13. Mustard seeds 1 teaspoon
  14. Vegetable oil 1 tablesoon
  15. Sesame seeds 1 teasoon
  16. Coriander leaves for garnishing 20g
  17. Roasted cashews 30 g .
  18. Coriander powder 1 teaspoon
  19. Powdered sugar 1 teaspoon
  20. Coriander seeds 1 Teaspoon

Instructions

  1. Boil both the pastas in a pan by adding water and little oil on a medium flame Here i am boiling fusilli pasta .
  2. Also boil macroni pasta too .
  3. Drain out both the pastas in a colander under running tap water .
  4. Keep both the pastas aside ..
  5. Now boil the kokum peels in the microwave for 5 minutes and keep it aside for cooling ..
  6. Let it cool for sometime .
  7. Transfer these contents in a mixer grinder and blend it to a fine paste ..
  8. Add rasam powder , black salt.
  9. Also add coriander powder and mix all these into the chutney paste.
  10. Mix all the ingredients in a blender thoroughly .
  11. Now in a pan Add oil and heat it on a medium flame. Add mustard seeds and whole red chillies and coriander seeds and allow it to splutter .
  12. Add green onions and all chopped veggies and shallow fry them .Add salt too .
  13. Add preboiled pastas too and mix all the ingredients thoroughly . Add red chilly powder too .
  14. Now add the kokum sauce and mix all the ingredients thoroughly .
  15. Saute for few more minutes by stirring it occasionally. Add sugar too to balance the tanginess.
  16. Your delicious digestive healthy innovative fusion recipe of italian- Indo konkani pasta is ready. Add few roasted cashew nuts and garnish with coriander leaves and sesame seeds.
