Ingredients to make Stuffed Portabella Mushroom

  • ½ cup Ricotta cheese
  • ¼ cup cream Cheese at room temperature
  • 4 tbsp. Mozzarella cheese
  • 2 tbsp. Parmesan cheese
  • 3 to 4 Large Portabella mushroom (wipe it with a wet paper towel)
  • 1 tsp. olive oil
  • 1/2 cup finely chopped onion
  • 2 tbsp. chopped garlic
  • 1 1/2 cups roughly chopped spinach leaves
  • 1 cup minced meat (Turkey / chicken /Lamb/Goat)
  • 1/4 tsp. nutmeg
  • 1 tsp. Red Chili Flakes
  • Parsley or coriander leaves for garnishing
  • salt to taste

How to make Stuffed Portabella Mushroom

  1. Preheat oven to 375 degrees F. Place the mushroom round side down and bake it for 10 to 12 minutes. Take it out and wipe all the water with a paper towel. Keep it aside to cool.
  2. Take oil in a pan. Add in the onion and garlic and saute it on low. Then clean, chopped spinach and increase the heat to medium high. Let the water evaporate. If adding minced meat, do that now and cook it completely.
  3. In another bowl add the ricotta, cream cheese and mix well. Add salt, chili flakes, nutmeg powder and mozzarella. Mix well.
  4. Add the meat mixture to the cheese mixture. Stuff the mushroom with this mixture and grate parmesan cheese on top. Bake it for another 12 to 14 minutes.
  5. Yummy stuffed mushrooms are ready. Serve it with a small salad.

My Tip:

User smaller Mushroom if you want to serve it as an appetizer.
