ABOUT COCONUT CREAM & SPINACH SOUP RECIPE

Soup in a Jiffy…. This is an almost instant soup, with couple of store cupboard ingredients. I have stipulated two tablespoons of Thai green curry paste, but do be prepared to add more if you like a bit more fire.

Ingredients Serving: 2

  1. 300 ml coconut milk/ cream
  2. 2 tablespoons green thai curry paste
  3. 1 bowl of spinach, chopped
  4. 250 ml boiled water
  5. ½ cube of vegetable bouillon powder
  6. 1 red chilli chopped, deseeded
  7. Salt optional
  8. Sesame seeds and fried spinach for garnish

Instructions

  1. Put the curry paste and vegetable bouillon cube into a medium-sized casserole and add a few tablespoons of the coconut milk to whisk it into a paste
  2. Stir in the remaining coconut milk and red chilly. Now heat the milk mixture on medium flame and add the boiled water.
  3. Add to it the chopped Spinach.
  4. Bring soup to the boil before putting on the lid and turning the heat down, so that the soup cooks at a gentle simmer for 10 minutes.
  5. When serving, sprinkle some fried spinach and sesame seeds along with some croutons
