Spinach corn toast is grilled sandwich with cheesy, creamy filling made from boiled kernels and chopped spinach. The procedure of making corn and spinach mixture is really easy and it is made in one step only. It is liked by kids too. Everyone enjoys this creamy sandwich for breakfast as well as for the evening snack.

Ingredients Serving: 4

  1. White Bread Slices 8
  2. Processed Cheese 50 grams
  3. Spinach leaves blanched and chopped 25-30
  4. Corn kernels 1/2 cup
  5. Butter 2 tablespoons
  6. Refined flour (maida) 2 tablespoons
  7. milk 2 tablespoons
  8. salt to taste
  9. Crushed black peppercorns to taste
  10. 1/4 tbsp crushed basil leaves or dried herbs
  11. A little olive oil to drizzle

Instructions

  1. Melt butter in a non-stick pan, add refined flour and saute till lightly coloured. Add milk and stir continuously to avoid lumps.
  2. When the sauce thickens add corn kernels and spinach and mix well. Add salt, crushed black peppercorns and basil leaves or dried herbs and mix well.
  3. Put the mixture into a bowl. Grate cheese into the bowl and mix well.
  4. Spread the mixture evenly on 4 bread slices, cover with the remaining slices.
  5. Drizzle a little olive oil over each sandwich. Toast them in a hot grill till evenly golden on both sides.
  6. Cut each sandwich into 2 pieces and serve hot.
