ABOUT Khoba Roti RECIPE

This is a very traditional Rajasthani Roti also known as Chutki wali Roti. Basic ingredients makes this roti delectable with a lil twist my style. Serve it warm with any kind of Dal or eat it plain with winter pickle.

Ingredients Serving: 2

  1. 1 cup whole wheat flour
  2. 1/4 cup besan
  3. a pinch ajwain
  4. salt to taste
  5. 1 teaspoon dry kasuri methi
  6. 1 teaspoon fresh finely chopped coriander
  7. 1 tablespoon melted ghee
  8. additional ghee for brushing
  9. warm water for kneading
  10. some flour for dusting if required
  11. chopped coriander for sprinkling on the top before serving

Instructions

  1. Knead the dough semisoft and firm. Let it rest for sometime.
  2. Roll it into medium size roti 1/4 cm thickness.
  3. Using your thumb and the index finger pinch the roti from the middle in circular form until a design is formed.
  4. Next place the flat surface gently on a warm pan to cook.
  5. Then flip the design part to cook on low to medium.
  6. If using gas stove, gently hold the Roti and cook on the flame the design part. Make sure not to burn it.
  7. I have electric stove so I have cooked on a pan only.
  8. Brush melted ghee over the warm roti filling all the gaps of the design generously
  9. Serve it warm or as a platter shown above in the pics or just enjoy it plain with pickle or any dip.
