A great tea time snack or a healthy after dinner dessert.

Ingredients Serving: 8

  1. Eggs-2
  2. Powdered sugar-100g
  3. Oil-75g
  4. Seedless dates- 50g
  5. Dry figs- 50g
  6. Walnuts-2 tablespoon
  7. Flour(maida)- 85g
  8. Baking powder -1/2 tsp
  9. Baking soda-1/2 tsp

Instructions

  1. Chop the dates,figs and walnuts.
  2. Mix 4 tablespoon water to dates and figs in a pan and keep on low flame in a pan.
  3. Now remove from flame and add in the baking soda.cool and keep aside.
  4. Sift flour and baking powder in a bowl.
  5. Add the chopped dry fruits to the flour.
  6. Beat eggs and sugar well until light and fluffy.
  7. Add oil gradually and keep beating till the oil is well blended.
  8. Now add the flour with dry fruits in small batches and fold till mixed properly.
  9. Transfer to a roll tin greased with oil.Bake in a preheated oven at 150'C for 40 minutes.
  10. Insert a knife into the centre of cake.If it comes out clean remove cake from the oven.
  11. Let stand for 10 minutes then remove the cake from tin.Cut into slices.
  12. Enjoy your roll with tea or coffee.
