Ingredients Serving: 4

  1. for making raw mango rice :
  2. Basmati rice 1 cup
  3. Grated raw mango 1 cup
  4. urad dal 1 teaspoon
  5. peanut to tablespoon
  6. Bengal gram dal 1 teaspoon
  7. Red chilli 2
  8. Green chilli 2
  9. Curry leaves few
  10. turmeric powder half teaspoon
  11. A pinch of asafoetida
  12. Grated coconut 1/4 cup
  13. oil for tempering
  14. salt to taste
  15. for making stuffed brinjal fry :
  16. small brinjals 5
  17. Mustard seeds 1 teaspoon
  18. urad dal 1 teaspoon
  19. Chana dal 1 teaspoon
  20. Curry leaves few
  21. turmeric powder 1/4 teaspoon
  22. oil 4 tablespoons
  23. salt to taste
  24. for making masala powder
  25. Bengal gram 3 tablespoon
  26. White sesame seeds 2 tbsp
  27. coriander seeds one teaspoon
  28. peanut 1 tablespoon
  29. Red chilli 4
  30. pepper half teaspoon
  31. tamarind small piece
  32. Grated coconut 1/4 cup

Instructions

  1. Cook the basmati rice with required amount of salt and water
  2. in a pan add oil and then add mustard Bengal gram peanut and saute for a minute
  3. and then add red chilli chopped green chilli curry leaves turmeric powder and A Pinch of asafoetida
  4. now add grated mango with some salt and allow them to cook for 2 minutes
  5. add cooked basmati rice and mix gently without breaking rice grains
  6. finally add grated coconut and mix well.
  7. Now spicy raw mango rice got ready...
  8. for making masala powder dry roast bengal gram white sesame seeds coriander seeds peanut red chilli pepper tamarind and grated coconut with a teaspoon of oil in a pan.
  9. Grind them into a coarse masala powder.
  10. Wash and trim the brinjal stem and make four slits on top of the brinjal.
  11. Pat dry the brinjal and stuff the coarsely ground masala powder inside each brinjal. Keep the excess masala for later use.
  12. heat oil in a pan add mustard seeds and allow to crackle. Add urad dal chana dal curry leaves and fry until browned.
  13. add stuffed brinjals and some salt... fry brinjals until colour turned slightly.
  14. Sprinkle some water and cover with lid.. simmer for 5 minutes and cook till brinjals are done.
  15. Once brinjals are done add the remaining masala powder and stir fry until the brinjals are dry and crisp
  16. Serve hot with spicy raw mango rice.
