About Black Sesame Pork - Naga Style Recipe

Black sesame pork is a winter delight food from Naga cuisine. It is healthy and delicious with a perfect combination of pork, black sesame and bamboo shoots. It is a zero oil dish. Hope you like it.

Black Sesame Pork - Naga Style

Ingredients to make Black Sesame Pork - Naga Style

  • 300 gms Pork
  • 3-4 tbsp black sesame
  • 2 tbsp Bamboo Shoot
  • 10-12 Dry Red Chillies
  • 1 inch ginger
  • 5-6 fat garlic cloves
  • 1 tbsp Sichuan peppercorns (Mejenga seeds)
  • salt as per taste
  • water as required

How to make Black Sesame Pork - Naga Style

  1. In a bowl take some hot water and soak the dry red chillies for few mins. Drain the water and pound them in mortar and pestle.
  2. Dry roast the black sesame seeds till it starts to crackle. Pound them coarsely in mortar and pestle and keep aside.
  3. Coarsely grind the ginger garlic just to open the flavor and keep aside.
  4. In a pan add the pork, pounded red chillies, salt to taste. Add enough water and bring to boil.
  5. Cook for about 10-15 mins, then add the bamboo shoots and continue to cook.
  6. When the pork is 80% cooked, add the black sesame and ginger garlic and continue to cook stirring occasionally till the pork is completely cooked and the moisture evaporates completely.
  7. Add the crushed roasted sichuan peppercorns, give a quick stir and take off the heat.
