Ingredients Serving: 5

  1. Rice 3 cup (small)
  2. Urad daal dhuli 1 cup(small)
  3. Methi seeds 1/4 teaspoon
  4. Mustard seeds 1 tablespoon
  5. Salt to taste
  6. Curry leaves 8-10
  7. Coconut grated 3 tablespoon
  8. Green chillies 4
  9. sugar 1 tablespoon
  10. Oil 1 tablespoon
  11. Orange food colour 1/4 teaspoon
  12. Green food colour 1/4 teaspoon
  13. lemon juice 1 tablespoon


  1. Soak the rice in a bowl with water for overnight.
  2. Soak urad daal and methi seeds together for overnight.
  3. In the morning, grind all the things and add little water and make a fine paste.
  4. let the batter sit for 5-6 hours for fermentation.
  5. now divide the batter in three parts; In first part, add orange food colour, in second part, add green food colour and the third will be as it is.
  6. now boil the water in dhokla steamer and grease the dhokla dish with oil and put the orange colour batter and steam for 15 minutes on medium flame.
  7. cook rest two more batter like this method.
  8. when it will be cooked, let it be cool then remove from the dhokla dish/plate.
  9. arrange the dhokla in tri colour in serving dish.
  10. Now take a pan and add 2 tablespoon oil, mustard seeds, curry leaves, green chillies, sugar, lemon juice, 1 cup water, grated coconut, and salt.
  11. after 1 boil of water, switch off the gas and pour this mixture on three layer dhokla.
