During four years of my graduation there was not a single day when I did not have my Samosa plate. After graduating with foods and nutrition I started adding healthy stuffings. But my Samosa craze always sends me to those collage days. So here is one of my healthy innovations.

Ingredients Serving: 4

  1. Broccoli florets 1 cup.
  2. Carrot grated fine 1 cup
  3. Peas crushed 1 cup
  4. Peanuts roasted and ground 2 tbsp
  5. Coconut grated fine 2 tbsp
  6. Sesame seeds roasted 1 tbsp
  7. Cheese cubes 3 grated
  8. Fresh green garlic crushed 2 tbsp
  9. Ginger crushed / grated 1 tbsp
  10. Coriander leabes chopped very fine 2 tbsp
  11. chilli powder 1 tsp
  12. coriander powder 1 tbsp
  13. Garam masala 1 tsp
  14. Salt to taste.
  15. Cannolla Oil 1 cup .
  16. Wheat flour 1 cup.
  17. Beetroot boiled and grated 1 tbsp
  18. Salt to taste.
  19. Oil 1 tbsp

Instructions

  1. Coarse grind broccoli florets in dry grinding jar.
  2. Heat 1 tbsp oil in a pan. Add broccoli and crushed Peas.
  3. Saute and cook on low medium heat.
  4. Add Carrot and all dry masala mentioned. Add ginger garlic too.
  5. Saute for 5 minutes. Turn off gas.
  6. Add Peanuts, Coconut, Sesame seeds .
  7. Add Grated Cheese and Coriander leaves. Let it cool.
  8. Check the salt and masala taste.
  9. Add salt and oil in wheat flour.
  10. Add grated Beetroot .
  11. Add water and knead the flour.
  12. Now turn two burners of gas on. On one keep griddle for heating .
  13. On another heat oil enough for deep frying in a pan.
  14. Take a small ball of dough. Roll it thin.
  15. Cut half, apply water. Put a filling and shape Samosa.
  16. First keep Samo sa on the griddle.
  17. Let it half roast. Turn and roast another side.
  18. Transfer in hot oil.
  19. Fry well.
  20. Enjoy with green coriander Chutney.
