Ingredients Serving: 2

  1. For sooji uttapam:
  2. Sooji -3/4 cup
  3. Besan -1/4 cup
  4. Curd-1/2 cup
  5. Water as per requirement
  6. salt as per taste
  7. Sugar-1 tsp
  8. Ginger chilli paste -1/2 tsp
  9. Chopped onion-2
  10. a pinch of Hing
  11. Some chopped Coriander leaves
  12. Chopped tomato -1
  13. Grated Carrot-1/4 cup
  14. Oil for greasing the tawa
  15. For preparing angoor khatta:
  16. Green grapes-1 cup
  17. dates-5-6
  18. Jaggery powder-3 tsp
  19. Tamarind juice-2 tsp
  20. Roasted cumin and red chilli powder-1 tsp
  21. Mustard oil-2 tsp
  22. Punch photon-1/2 tsp
  23. Some curry leaves
  24. Ginger garlic chilli paste-1/2 tsp
  25. Turmeric powder-1/2 tsp
  26. Chilli powder-1/2 tsp
  27. salt as per taste
  28. Water -1/2 cup

Instructions

  1. For sooji uttapam: Mix Sophi, besan, salt, sugar, curd and water to make a batter and keep it aside for 10-15 minutes.
  2. Then mix ginger chilli paste in it.
  3. Grease the tawa with oil and then pour a ladle full of batter in it and make spread it to make uttapam and sprinkle all the veggies over it and cook both sides well and serve hot.
  4. For angoor khatta: Cut all the grapes from the middle.
  5. Heat s pan and put oil in it and then add the hing and punch photon in it.
  6. When the mustard in the punch photon crackle then add ginger, garlic, green chilli paste and then saute it for 1 minute.
  7. Then add the grapes along with the tamarind juice, salt, turmeric powder, chilli powder and mix it well and cover it for 5 minutes.
  8. Then add the dates and Jaggery powder in it and allow it to boil for sometime and then add the roasted cumin red chilli powder in it.
  9. When it becomes a little thick then switch off the flame.
  10. Now the angoor khatta is ready .
  11. Serve after cooling down to room temperature with your instant sooji uttapam.
