Ingredients Serving: 6

  1. Semolina : 1 cup
  2. Milk : 2 cups
  3. Sugar : 3/4 cup
  4. Ghee : 2 tsp
  5. Bay leaf : 2
  6. Cardamom powder: 1/2 tsp
  7. Raisins : a few

Instructions

  1. First dry roast semolina to a nice golden brown colour.
  2. Warm milk and add the roasted semolina to it. Leave it for 10 minutes.
  3. In a deep bottomed pan, warm ghee, add sugar while stirring continuously. Do this till you get a lovely colour and consistency of caramelised sugar. Now add cardamom powder and bay leaves.
  4. Add the soaked semolina gradually while you keep stirring. Soon the halwa starts leaving the sides of the pan. This is when the mesmerizing aroma of ghee and roasted semolina will surely make your neighbours envious.
  5. Halwa is ready, garnish with raisins and serve hot.
