Almond brittle cake

Ingredients to make Almond brittle cake

  • butter 150 gm
  • sugar 175 gm
  • eggs 3
  • Self raising flour 150 gm
  • Baking powder 1 tsp
  • almond meal 75 gm
  • Milk 2 tsp
  • oil for greasing
  • almonds sliced 50 gm
  • sugar 50 gm
  • Whipped cream 2 cups
  • Vanilla extract 1 tsp

How to make Almond brittle cake

  1. For the cake: Preheat the oven at 180 degree centigrade. Grease two 8 inch tins.
  2. Seive flour and baking powder.
  3. Cream butter and sugar together until fluffy.
  4. Add 1 egg at a time beating well after each addition.
  5. Add flour mixture and almond meal. Beat it until just incorporated.
  6. Add milk. Beat well. Pour batter to the lined baking tin. Bake for 15 to 20 minutes. Allow cake to cool before frosting.
  7. For almond brittle: Heat a nonstick pan, add sugar.
  8. Wait till it caramelises to golden brown color. Grease a tray with oil.
  9. Add almonds. Rotate pan till almond is coated with caramel. Pour it on the tray and spread a little. Allow it to cool. Break it to chunks.
  10. Filling and Frosting: Whip 2 cups of cream with vanilla.
  11. Add the brittle to whipped cream.
  12. Cut the cake into layers if necessary.
  13. Fill it with whipped cream. And cover it with the same. Keep in fridge until serving.
  14. I decorated it with some spun sugar and almond brittle.

My Tip:

If almond meal is not available, can replace it with flour + corn flour.
