ABOUT MUTTA PATHIRI / OTTADA IN NON-STICK PAN RECIPE

Mutta pathiri / ottada is a traditional breakfast dish in Malabar region. It is usually made in a earthern pan. Here am sharing the ottada recipe using with a non stick pan. It is so soft, fluffy and taste spectacular. It is served as an evening snack or as part of breakfast. Serve it with coconut milk or ghee and sugar or with any curries.

Ingredients Serving: 5

  1. 1. Maida  - 1 and 1/4 cup
  2. 2. Rice flour  - 3/4 cup
  3. 3. Coconut milk  -  1 to 2 cup
  4.  4. Boiled water  - almost 1 cup
  5. 5. Egg - 1
  6. 6. Baking soda  - 1/4 tspn
  7. 7. Salt

Instructions

  1. Add rice flour in a bowl. Add boiled water. Mix well and make a thick paste.
  2. To this add Maida, coconut milk and combine well. Make a thick paste.
  3. In a blender, add this mix, egg and baking soda. Blend for few seconds and make a smooth paste.
  4. The batter should have the right consistency. It shouldn't be too thick nor too thin.
  5. Heat a non stick pan, pour one ladle of batter when the pan is really hot.
  6. When the bubble began to appear, reduce to medium flame for 30 seconds and then to low flame.
  7. Then cover and cook for a minutes. Tasty mutta pathiri / ottada is ready to be served.
