ABOUT Colourful Garlic bread bruschetta topped with pasta RECIPE

Have made this recipe healthy by making the white sauce from whole wheat flour. Divided the sauce into two parts and added spinach puree in one part and tomato puree in the other part. Making the recipe more healthy. First have spread the layer of red and green coloured white sauce and then vegetable topping and healthy rawa pasta and some grated cheese. Since it is colourful and the veggies are hidden below pastas and kids favourite cheese is also there. Hence kids will surely enjoy this healthy and colourful dish.

Ingredients Serving: 3

  1. 250g garlic flavoured bread slices
  2. For vegetable topping-
  3. 1 cup all three coloured capsicum cut into pieces
  4. 4 tbsp green part of spring onions
  5. Salt to taste
  6. 2 tbsp butter
  7. 1 tbsp olive oil
  8. 1 tsp mixed herbs
  9. For white sauce:
  10. 4 tbsp butter
  11. 4 tbsp whole wheat flour
  12. 2 cups full fat milk
  13. salt to taste
  14. 1 tsp freshly ground black pepper powder
  15. 1/4 cup fresh spinach puree
  16. 1/4 cup fresh tomato puree
  17. 1/2 cup boiled shell pasta
  18. For garnishing:
  19. Grated cheese
  20. Chilli flakes
  21. Served with:
  22. Chilli garlic sauce

Instructions

  1. For vegetable topping: Heat butter and oil in a pan and cook the capsicums for some time.
  2. Now add all the ingredients for vegetable topping and saute for few minutes and keep it aside to cool.
  3. For white sauce: Heat the butter and cook the flour till it leaves a beautiful aroma.
  4. Now add milk by continuously stirring.
  5. Add salt and pepper powder to it. Mix properly.
  6. Cook till it becomes a bit thick.
  7. Let it cool for some time.
  8. Now, divide the white sauce in two parts.
  9. In two different vessels cook the spinach puree and tomato puree till they loose some water. (Don't cook much just for 2-3 minutes)
  10. Add the cooked spinach puree to one part and cooked tomato puree to another and mix them properly.
  11. Assembling: Take thin slices of garlic bread and apply spinach white sauce on some and tomato white sauce on the others.
  12. Place the vegetable topping on them.
  13. Now place the cooked pastas on all the slices.
  14. Garnish with cheese and chilli flakes.
  15. On a non-stick tava toast the lower side of the bread.
  16. Yummy bruschetta is ready to serve.
  17. Serve with cheese garlic sauce.
