Carrot Rice is one of the healthy, one pot and tasty rice variety prepared easily. We can pack this carrot rice in lunch box, kids will love it. We can have it with any gravy recipes.

Ingredients Serving: 4

  1. For Rice
  2. Sonamasuri rice - 1 glass
  3. Water - 2 glasses
  4. Ghee - 1/2 tsp
  5. Oil - 1/2 tsp
  6. Elachi - 4
  7. Cloves - 3
  8. Star anise - 2
  9. Cinnamon stick - 1 inch
  10. For Carrot rice
  11. Carrot - 2
  12. Onion - 2
  13. Peas - 1/2 cup
  14. Ghee - 1 tsp
  15. Oil - 2 tsp
  16. Bay leaf - 2
  17. Green Chillies - 2
  18. Cashew nuts - 7
  19. Garam masala powder - 1/2 tsp biryani masala powder - 1 tsp
  20. salt as per taste
  21. Coriander leaves - 1 tsp


  1. Wash rice in water 2 to 3 times. Soak it for 15 to 20 minutes.
  2. After 15 minutes, heat a vessel add ghee, oil. Once it become hot add elachi, star anise, cloves and Cinnamon stick. Fry it for a second then add water let it boil then add soaked rice and cook rice.
  3. Meanwhile peel carrot and grate it into plate. Cut onions roughly, slit green chilli keep it ready.
  4. Prepare rice and spread it in plate.
  5. Boil matar by adding water and salt and keep it ready. You can also fry it till peas./matar become soft.
  6. Now take a pan add oil and ghee, add bay leaf, cashew nuts fry till it changes color. Now add green chilli fry, onions, salt fry till onions changes color.
  7. Now add matar to the above mix it once. Now add grated carrot to the above mix everything well. Close the lid and cook till carrot becomes smooth.
  8. When carrot cooked well add garam masal and biryani masala powder mix everything well.
  9. Add cooked rice, 1 tsp of ghee saute it well.
  10. Carrot Rice is ready. Taking it into serving bowl and garnish with coriander leaves.
  11. Yummy and delicious carrot rice is ready. I had this rice with malai matar paneer :yum::yum:
