ABOUT Strawberry Jelly Shots RECIPE

This jiggly dessert is so beautiful to look at, tasty to have and is made with real strawberry fruits. I used veg gelatin i.e agar agar shreds to set the jello in these beautiful glasses. The main ingredient is the homemade compote made from freshly picked strawberries of this season. I garnished with whip cream frosting and fresh fruits to attract the little guests in the party.

Ingredients Serving: 6

  1. 500 ml water for jello
  2. Fresh Strawberries 600 grams
  3. Agar agar 5 grams
  4. Red food colour few drops (optional)
  5. Brown sugar 1/4 cup
  6. Castor sugar 1/8 cup
  7. Chilled Whipped cream 1 cup
  8. Vanilla essence few drops
  9. 3-4 berries for garnishing

Instructions

  1. Chop the strawberries. Add chopped berries to a sauce pan, add brown sugar and cook until the berries look completely cooked. This may take around 15 minutes.
  2. Add some food colour at this point (if you are using any). Sieve the crush mixture or puree in a mixer grinder. I used it as is. This can be stored in refridgerator for 6 months.
  3. Dissolve agar agar in 1/4 cup water, leave it for 15 minutes.
  4. Boil water in a sauce pan add 1/2 cup of homemade strawberry crush. Add castor sugar and let it dissolve completely.
  5. Heat the agar agar mixture. When it dissolves in water add to the jello mixture. Stir continuously till the mixture looks clear.
  6. Add a tablespoon of chopped fresh strawberries into the serving glasses. Pour the prepared jello mixture.
  7. Refrigerate the glasses to set for at least 4 hours or better overnight.
  8. Before serving, whip the chilled cream and vanilla essence, till stiff peaks appear.
  9. Decorate jello shots with a dollop of whipped cream and fresh fruits and strawberries.
