ABOUT Jam Coconut Muffins RECIPE

This is a perfect combination of any jam with coconut, kids love it. Mixed fruit jam and strawberry jam goes very well with the recipe

Ingredients Serving: 6

  1. All purpose flour 75gm
  2. Desiccated coconut 25gm
  3. Condensed milk 100gm
  4. Butter 30gm
  5. Baking powder 1teaspoon
  6. Baking soda 1/2teaspoon
  7. Coconut or vanilla esssence 1/2teaspoon
  8. Milk a little to asjust the thick flowing consistency
  9. For decoration:
  10. Melted mixed or strawberry jam 1cup
  11. Desiccated coconut 1/ 2cup
  12. Glazed cherry 6

Instructions

  1. Sieve all dry ingredients.
  2. Add 25gm desiccated coconut and mix.
  3. Beat butter and condensed milk. Add essence.
  4. Add flour little by little and mix it well
  5. Add milk to add dropping consistency.
  6. Grease muffins pan or put liner in it.
  7. Fill a little batter into each liner, put some thick jam in the middle and pour a again a little batter to cover the jam.
  8. Bake it in a pre heated oven at 170 degree for 15-20 min or until a toothpick comes clean when insert in the middle.
  9. Cool, unmould and dip in melted jam.
  10. Roll into desiccated coconut and decorate with cherry.
