Punjabi kadhi with baked pakora

Ingredients to make Punjabi kadhi with baked pakora

  • For pakora:
  • Chopped spinach 1 cup
  • onion 1 medium , chopped
  • garlic 1/2 tsp, finely chopped
  • ginger 1/2 tsp, finely chopped
  • Gramflour 1 cup
  • cumin powder 1/2 tsp, roasted and coarsely ground
  • red chilli powder 1/2 tsp
  • coriander seeds 1/2 tsp
  • Carom seeds 1/4 tsp
  • salt 1/2 tsp or as per taste
  • asafoetida 1/4 Tsp
  • water less than 1/4 cup or as per requirement
  • oil 1 tbsp
  • For kadhi:
  • Gramflour 1 cup, slightly roasted
  • Yougurt 2½ cups
  • red chilli powder 1 tsp
  • turmeric powder 1 tsp
  • salt 1½ tsp or as per taste
  • water 5-6 cups
  • clarified butter/ghee 1 tbsp
  • Dry red chilli 2
  • asafoetida 1/4 Tsp
  • mustard seed 1 tsp
  • fenugreek seeds 1/4 tsp
  • cumin seeds 1 tsp
  • For Tempering:
  • clarified butter/ghee 1 tbsp
  • cumin seeds 1/2 tsp
  • red chilli powder 1/2 tsp

How to make Punjabi kadhi with baked pakora

  1. For pakoras; in a bowl put all the ingredients for pakoras, except oil.
  2. Mix it properly , prepare a homogeneous mixture, the mixture should stick into balls with your hands,let the mixture sit for couple of minutes.
  3. Preheat the oven to 220°C for 15 minutes ,lined a baking tray with butter paper,brush oil on it.
  4. Using a icecream scoop, place scoops on lined baking tray, keep them small,give some space in between ,brush oil on the pakoras.
  5. Put it in the oven.
  6. Bake it at 220°C for 20-25 minutes or until golden brown.
  7. For kadhi; meanwhile prepare besan mixture first,in a bowl add gramflour,red chilli powder, turmeric powder, yougurt ,salt,water,mix them well, keep aside.
  8. Heat pan on medium flame ,add ghee, Fenugreek seeds, cumin seeds,dry red chilli, mustard seeds,asafoetida,let it sputter .
  9. Now add the besan mixture, let it cook for 8-9 minutes or till it thicken in consistency, stir it continuously,
  10. Add pakoras and cook it for a minute.
  11. For tempering,take a small pan,add ghee , cumin seeds in medium flame,let it sputter,add red chilli Powder.
  12. Immediately add the mix on the kadhi.
  13. Serve hot with steamed basmati rice, enjoy.
