Ingredients Serving: 4

  1. 1 kg mutton
  2. 2 tbsp refined oil
  3. 4 cups water
  4. 2 tsp Ginger garlic paste
  5. 1 tbsp fried onion paste
  6. 3 tbsp Curd
  7. 2 tsp rose water
  8. 1/2 tsp saffron stands,soaked in milk for 15 minutes
  9. Coriander leaves for garnish
  10. Ginger julienne for garnish
  11. 1 tsp turmeric powder
  12. 1 tsp coeiander powder
  13. 1 tsp red chilli powder
  14. 2 tsp garam masala powder
  15. 1/4 tsp nutmeg powder
  16. 1/2 tsp Cardamom powder
  17. Salt to taste
  18. Whole spices--
  19. 4 CARDAMOM
  20. 1 inch cinnamon stick
  21. 2 Bay Leaves

Instructions

  1. Heat oil in a pan and add whole spices.
  2. Now add the meat and saute for 10 minutes..
  3. Add salt and turmeric and mix well.pour in the water,cover the pan and cook.
  4. When it comes to a boil,immediately add ginger garlic paste,coriander powder,red chilli powder and onion paste..
  5. Now add nicely whisked yogurt,rose water,garam masala,nutmeg powder and cinnamon powder and saffron soaked milk..
  6. Mix it well.
  7. Cover the lid and cook on slow flame for 1.5-2 hours.
  8. Once the meat is cooked till tender,garnish with fresh coriander and ginger guliennes.
  9. Serve with butter naan or rice.
