Ingredients Serving: 6

  1. Digestive biscuits ( crushed) 15 to 20
  2. Pineapple pieces 100 gm
  3. Pineapple essence 1 tsp
  4. Whipped cream 2 cups
  5. Cream cheese 1 cup
  6. Sugar 1 cup
  7. Gelatin 1 tbspn
  8. Butter 50 gm


  1. 1. Crush the digestive biscuits. Place it in a bowl. Then add softened butter. Mix till it resembles crumble 2. Grease a loose bottomed aluminium baking dish with butter well up the sides. 3. Press the prepared biscuit crumb on the surface of the baking pan. Place in the freezer for 10 min. 3. In a separate bowl take cream cheese abd sugar. Beat with an electric beater till smooth. Roll the pineapple pieces in a little flour and mix with the cream cheese. Add the whipped cream and fold. Dissolve the gelatine in 1/2 cup warm water till you get a plastic colour. Add the gelatine to the mixture. Mix gently. 4. Pour the mixture in the baking pan where the crushed biscuits have been pressed in. Place the pan in the fridge ( not freezer). Keep it overnight. Demould next morning when set by pushing the loose bottom from under. 5. Decorate with pineapple jam and pineapple pieces. Or sugar candies. Cut in triangles and serve.
