Deep fried lady fingers marinated with spices and gram flour.

Ingredients Serving: 5

  1. Okra or lady fingers 200 gms
  2. Gram flour 2 tbsp, heaped
  3. salt 1/4 tsp
  4. Rock salt 1/2 tsp
  5. Chaat masala 1/2 tsp
  6. Red chilli powder 1/2 tsp
  7. Coriander powder 1/2 tsp
  8. Saunf jeera powder 1/2 tsp
  9. Garam masala 1/2 tsp
  10. Amchoor powder 1/4 tsp
  11. Oil for frying


  1. Wash the lady fingers properly. Then dry it properly with the help of a kitchen towel.
  2. Next, cut it into thin diagonal slices. Add in all the spices and gram flour. Then toss it well. Leave it to marinate for 30 to 45 minutes.
  3. Heat oil in a wok to a high heat. Add a batch of the marinated okra and fry on a medium heat. (Keep turning the okra for even cooking.)
  4. Fry till they are golden and crisp. Once they seem about done put the flame on high, this prevents excessive oil absorption.
  5. Remove this on paper napkins and serve it with chapatis and raita.
