Beetroot Pulao

Ingredients to make Beetroot Pulao

  • Beetroot medium -2
  • Basmati rice- 1 1/2 cup
  • garlic cloves 7/8
  • 1 onion (large) chopped
  • 12- French beans chopped
  • 1-carrot chopped
  • 1- capsicum chopped
  • 1/2 Cup Green peas
  • 100gms paneer(small cubes)
  • 3-spoons oil (app)
  • 1/2tsp jeera
  • 2 geen chilles(optional)
  • Red chillie powder-1/2tsp
  • salt to taste
  • 1-tsp garm masala (Everest)
  • Chopped green coriander leaves

How to make Beetroot Pulao

  1. Boil rice with green peas and salt. Keep aside.
  2. Meanwhile make a paste of beetroot, garlic and green chillies.
  3. Take a kadai and heat oil in it, fry paneer with a little salt and keep aside.
  4. In the remaining oil add jeera, onions, carrots, beans and saute for 3 minutes. Add capsicum, saute for 1 minute. Add beetroot garlic paste, add salt, red chilli powder, garam masala - saute for 2 more minutes.
  5. Add rice,mix lightly and add paneer cubes.
  6. Cover and keep it on sim gas for 2 minutes.
  7. Garnish with coriander leaves.
  8. Serve hot with papad, curd and pickle of your choice.

My Tip:

Tofu can be used in place of paneer. Other vegetables like cauliflower or sliced mushrooms can be added.
