Okra Stir Fry

Ingredients to make Okra Stir Fry

  • Ladies finger 15-20
  • coconut oil 4 tsp
  • cumin seeds 1/4 tsp
  • urad dal 1 tsp
  • Channa dal 1 tsp
  • green chilly 1 chopped
  • Dry red chilly 2 break into 2-3 pieces
  • onion 1 large sliced
  • curry leaves 1 sprig
  • garlic 4 crushed
  • lemon juice 1 tsp
  • chilly powder 1 tsp
  • turmeric powder 1/4 tsp
  • coriander powder 1/4 tsp
  • coconut 4 tsp grated
  • peanut a handful roasted and skinned
  • salt to taste
  • coriander leaves for garnish

How to make Okra Stir Fry

  1. Wash the whole ladies finger (do not cut the edges now). Rub and pat them dry in clean kitchen towel.
  2. Cut off the edges and cut them into thin rings. Set aside.
  3. Heat oil in a pan.
  4. Add the cumin seeds, Urad dal, channa dal and saute till the dal turns golden.
  5. Add the garlic, curry leaves, onion and the chillies. Saute till onions turns soft.
  6. Now add the ladies finger, salt and the lemon juice, mix well.
  7. Cover the pan and fry till the stickiness of ladies finger goes away around 5 mins.
  8. Add the chilly powder, turmeric powder and coriander powder, mix well and fry further till the ladies finger is nicely cooked and soft approximately 5-10 mins.
  9. Once it is done, add the grated coconut and the roasted peanut.
  10. Fry for around 3-5 mins stirring continuously and take off the heat.
  11. Garnish with coriander leaves and serve.

My Tip:

You can use curd instead of lemon juice. Using curd/lemon juice is a trick to handle the stickiness of the Okra. I have used coconut oil but you can use any oil.
