ABOUT Falafel and Hummus RECIPE

It is a middle eastern delicacy in which chickpeas are the main ingredients.

Ingredients Serving: 4

  1. For Hummus:
  2. Boiled chick peas 250 gm
  3. Sesame seeds 1 tsp
  4. Garlic pods 3-4, chopped
  5. Salt to taste
  6. Oil - olive oil/ canola oil mix in hummus
  7. Lemon juice 1 tsp
  8. For falafel:
  9. Soaked Chickpeas - 250 gm
  10. Cumin seeds 1 tsp
  11. Salt to taste
  12. Black Pepper 1 tsp
  13. Fresh coriander / parsley chopped 1 tbsp
  14. Garlic pods 3-4, chopped
  15. Onion 1, chopped
  16. Soda bicarbonate a pinch
  17. Oil for Deep frying

Instructions

  1. For Hummus (dip) : Mix all the ingredients and blend in a blender to make a fine paste. Store in an air tight container for 3-4 days in the fridge. At the time of serving, add generous amount of olive / canola oil to make a smooth hummus dip.
  2. For Falafel: Grind over night soaked chickpeas and the other ingredients.
  3. Make a coarse paste without adding any water. Meanwhile heat oil on stove top. Make small balls from the ground mixture then slightly flatten with your hands as in a tikki shape.
  4. Deep fry till golden and crispy. Flip on the other side till fried well, take them out on an absorbent paper.
  5. Garnishing - In the centre of the platter, add Hummus dip, pour oil on the dip, decorate with boiled chickpeas, arrange the Falafel around the dip. Garnish with fresh coriander leaves.
