Yellow pumpkin in tamarind sauce.

Ingredients Serving: 4

  1. Yellow pumpkin 1/2 kg cut into pieces
  2. Onions 2
  3. Ginger 1 tsp, grated
  4. Methi seeds 1 tsp
  5. Dry red chillies 3
  6. Red pepper powder 1/2 tsp
  7. Kashmiri lal mirch 1/3 for colour
  8. Turmeric 1/2 - 1 tsp
  9. salt as per taste
  10. Garam masala little pinch
  11. Tamarind 150 gm
  12. Sugar 1/2 cup
  13. Mustard Oil 3 tsp

Instructions

  1. Take a pan and add mustard oil followed by methi seed, dry red chillies.
  2. When methi seeds crackle, add onion and ginger.
  3. Stir onions till the colour becomes golden.
  4. Take a bowl, add red pepper, turmeric, salt, garam masala, and the most important kashmiri lal mirch. Mix all with a little water.
  5. Add this mixture to the onions and saute.
  6. Add pumpkins and cook for 10 minutes with the lid on.
  7. In a bowl, add tamarind with water. Make a tamarind paste, thin and watery.
  8. Add this tamarind and sugar to the pumpkin and cook for another 10-15 minutes.
  9. When pumpkin is soft, mash some pieces of it.
  10. Turn off the gas. Garnish with onion rings.
  11. Serve hot with boiled rice and channa dal.
