1. Place the butter, sugar and vanilla extract in a table top mixer, using a paddle attachment, mix them till soft and fluffy.
2. Add the sieved egg yolk, lemon zest and mix, continue adding the flour and mix till they form a homogeneous mixture (1-2 minutes).
3. Divide the dough into two equal halves and rest for 10 minutes and roll them out making 2 inch thick square. Using a flower shaped cutter cut and lay the Canestrelli's on to a baking tray layered with parchment paper.
4. Bake them at 140°C for 20 minutes. Allow them to cool and generously dust with icing sugar and serve.
