ABOUT WHOLEWHEAT CARAMEL CAKE WITH BOLD FLAVOURS OF 3 NATURAL SWEETENERS ! RECIPE

Healthier version, inspired by M.M. Saum's Caramel Cake recipe from my newly acquired "The Landour Cookbook - Over Hundred Years of Hillside Cooking"

Ingredients Serving: 8

  1. 3/4 cup cane sugar
  2. 2 tbsp organic liquid jaggery
  3. 1/4 cup mix of white and coconut sugars
  4. 1/4 cup water
  5. 2 Eggs
  6. 1/4 cup butter
  7. 1/2 cup milk
  8. 1 1/2 cups wholewheat flour
  9. 1 tsp baking powder

Instructions

  1. Heat the mix of white and coconut sugars to melt it. When it turns brown, add the water to make the caramel sauce.
  2. Keep it aside to cool off. Preheat the oven at 160 degrees Celsius.
  3. Cream the butter, cane sugar and liquid jaggery together.
  4. Add the eggs one at a time and mix well.
  5. Add the cooled off caramel sauce and mix.
  6. Add the sifted flour and milk alternately until both are incorporated well into the batter.
  7. Put it into a greased baking tin and bake for 30-40 minutes.
  8. Cool off, slice it and serve.
