Famous Mumbai street food. Indian breads served with mashed vegetables. I think it's kid's favourite, full of nutrition and health.

Ingredients Serving: 5

  1. Bottle guard 1
  2. Cauliflower 1
  3. Carrot 2
  4. Onions 4
  5. Tomatoes 4
  6. Garlic 1 tsp (optional)
  7. Salt 1+1/4 tsp
  8. Paav bhaji masala 2 tbsp
  9. Oil 1 tbsp
  10. Butter 2 tbsp + to roast paav
  11. Paav breads

Instructions

  1. Peel wash and cut bottle guard and carrot roughly.
  2. Cut cauliflower roughly and wash.
  3. Boil all vegetables with a cup of water and salt.
  4. Chop onions finely.
  5. Grind tomatoes to puree.
  6. In a pan heat oil. Add butter. Add crushed garlic (optional). Saute for few seconds.
  7. Add chopped onions. Roast on medium till light pink.
  8. Add pureed tomatoes. Roast.
  9. When oil starts leaving add paav bhaji masala dissolved in half cup water.
  10. Cook for 2 -3 minutes on low.
  11. Add prepared masala to boiled vegetables and mash vegetables properly. If you wish, add more butter and let it cook on low for 15 minutes. Keep stirring in between.
  12. Cut paav into halves and apply butter on both sides. Sprinkle some paav bhaji masala. And roast on griddle both sides.
  13. Serve with bhaji and sweet pickled onions.
