ABOUT Mutton Rogan Josh RECIPE

This delicious mutton dish is one of the most well known and widely loved delicacy of Kashmiri cuisine.

Ingredients Serving: 4

  1. 800 grams mutton (cut into pieces)
  2. 1 cinnamon stick
  3. 5-6 Black peppercorns
  4. 7-8 Cloves
  5. 3-4 Black cardamoms
  6. 4-6 inch pieces Ratanjot (Alkanet)
  7. 1/2 teaspoon Asafoetida
  8. 4 tablespoons Oil
  9. 1 tablespoon coriander powder
  10. 1 tablespoon red chilli powder
  11. 2 teaspoons fennel seed powder
  12. 1 tablespoon dry ginger powder
  13. 1 cup yogurt whisked
  14. Salt according to taste

Instructions

  1. Heat the oil in a pan/kadhai.
  2. Once the oil is hot, put in the cinnamon stick, peppercorns, cardamoms, cloves, asafoetida together. Sauté and cook till the fragrance of the spices fills the room.
  3. Next, add in the mutton pieces and cook this on medium flame. Continue stirring and cooking for 10-15 minutes until the meat changes to a reddish brown colour.
  4. Then lower the flame, pour in a little water and let it simmer and cook for another 12-15 minutes.
  5. Now, add in the coriander powder, red chilli powder, dry ginger powder, fennel powder along with salt. Stir well so that the spices combine well with the meat.
  6. Finally pour in the yogurt along with 2 cups of water. Cover with a lid and cook for 55-60 minutes, while continuously stirring in between this time.
  7. Serve hot with a plate of freshly cooked rice.
