Rabdi Ghewar

Ingredients to make Rabdi Ghewar

  • maida 2cups
  • ghee 50gm
  • Ice cubes 4
  • Milk 50ml
  • ghee for deep frying 1 kg
  • sugar for making syrup 1 and 1/2 cup
  • water for making syrup 1 cup
  • Powdered cardamom 1 tsp
  • Chopped almonds and pista 1 tsp
  • Milk for making rabdi 500 ml
  • sugar for making rabdi 130 g
  • elaichi powder 1/2 tsp

How to make Rabdi Ghewar

  1. 1) For making Rabdi
  2. Take milk in a pan. Boil it.
  3. Once it comes to book..reduce to low and simmer
  4. Reduce milk till half..add sugar and elaichi powder.
  5. 2) Ghewar
  6. Prepare sugar syrup of 1 string consistency. Add elaichi powder.
  7. Take ghee in a bowl. Taking 1 Ice cube at a time.. rub ghee vigorously Rub till ghee becomes white.
  8. Add milk, Maida and water Mix to make a smooth and thin batter.
  9. Now take a flat pan. Add ghee When ghee is smoky hot, take 50 ml of batter with a laddle... pour in centre of ghee..in one continous stream
  10. Allow foam to settle. Pour one more in the hole formed in centre.
  11. When foam settles again..loosen ghewar with a rod
  12. Lift carefully and place on wire mash to drain
  13. Dip ghewar in chasni and keep again on mesh to drain access syrup
  14. Top ghewar with rabdi and garnish with pista almonds and silver warq

My Tip:

Oil must be smoky hot.If u pour batter on an oil dat is not too hot, ur batter will settle at the base and net like ghewar wont be formed. Batter should be very thin. I made ghewar on a canteen. burner.. as the level of heat is more than our kitchen gas.
